Fruits and veggies here in Jordan actually have flavor. I’m talking every single fruit and vegetable. Gosh even cucumbers tastes like more than just water. It’s the most fabulous thing. I guess they haven’t gotten into genetically modified food yet. I really hope it never gets to that point because back in DC, unless you’re buying organic or from the farmer’s market, your produce is pretty bland. Honestly, all this freshness makes me want to eat all the produce and get creative with different ways to use them all. Case-in-point, Turmeric Carrot Fries.
I’m not giving up bread just yet. Although, my cousin and I did decide to go on a no-carb, clean eating diet for 2 weeks. Mostly because I’ve been stuffing my body with all the fast food—all of it. I needed to reset. I’m not even sad about it. I’m actually loving it. I found my chia seeds and almond milk, so I started taking chia pudding to work again. And the fresh produce just gives me an excuse to eat all the veggies, and load up on fruit.
There’s this adorable tent near the community mosque that sells produce. Everyday, year-round, rain or shine. It’s walking distance from my apartment which makes it super convenient until I get myself a car. The produce is super fresh, but I have to be sure to wash them very well. They’re so fresh, in fact, that they usually still have some dirt caked on. Not to worry, some water and a splash of white vinegar help to get them clean and ready for eating.
Ingredients
- 5 large Carrots peeled and cut into slices (I cut each in half horizontally, and then began slicing)
- 1 tablespoon olive oil
- ¼ teaspoon Turmeric
- Salt, to taste
- 1-2 tablespoons grated Parmesan cheese
- 2 cloves garlic, minced
Instructions
- Preheat oven to 215 C (415 F)
- Line a large baking sheet with parchment paper
- In a large bowl, toss together carrots, olive oil, salt, turmeric, garlic, and parmesan cheese until well coated
- Place the carrots evenly in one layer on the baking sheet
- Bake for 10 minutes, then flip the carrots and bake for another 10 minutes
- Serve warm (optional, squeeze fresh lemon juice on the hot carrot fries)
