It’s March — that awkward time between winter and spring where one day you’re enjoying lunch outside on a warm sunny afternoon and the next day, it’s so cold your fingers feel like they’re going to fall off. The allergies are starting to set in, but not quite as aggressively as they will in a few weeks. It’s when you think about switching out your heavy winter clothes for light spring outfits and then you thank your lucky stars you didn’t follow through with that plan.

There’s no season like soup season.

We had our very first snowfall of the year last week. Super early for DC standards since it doesn’t usually snow until mid-January. In usual DC fashion, federal offices were open on time, but the roads were practically undriveable (yes I just made that word up). Of course, I had a meeting downtown bright and early. I decided to take the metro, since getting into the city even without snow is what nightmares are made of. Well, I made it all the way in, and had just gotten off at the closest metro stop (which still had me walking about 15 minutes to the meeting) when I got a text letting me know the meeting was changed to call-in only. Convenient. So what did I do? I put myself back on the metro but instead of heading home, I went to the metro nearest my office. Snow in the burbs was the worst. Just imagine slushy snowcone roads. How to Make Chicken Broth

It’s Fall! Which means, it’s officially time for one of my favorite food groups — Soup. Soup season [in my book] runs from late September through early March. Soup is just so warm, and cozy. It’s also very filling, and if done right, can be low calorie and super filling at the same time! #winning [Are we still using hashtags in conversation, or is that so 2017?]

The base for all my soups, even the vegetable ones, is chicken broth. I usually have a few boxes hiding out in my cupboard. This year, though, I’ve been making an active attempt to decrease my processed food intake — I consider boxed chicken broth processed. I mean, how do you think they keep broth suitable for consumption when it isn’t even refrigerated? A little bit of work on the front end, will save you lots of time later on. Garlicky Roasted Asparagus & Tahini Soup

It’s February! For better or for worse, February is the longest short month of the year. On Friday, our dear friend Punxsutawney Phil predicted six more weeks of winter, making everyone up and down the North East groan in despair. Hasn’t this winter been brutal enough?! And just to bring the point home, we were slammed with below freezing temperatures again early this week. It doesn’t look like we’re going to be catching a break anytime soon.

The only solace we have are warm, cozy soups. Garlicky Roasted Asparagus & Tahini Soup, for example, steaming mugs filled with Nutella Hot Chocolate, and lots of chunky layers. I may or may not have a set of grey fleece PJs with a fleece-lined hood that I rock every chance I get. (more…)

Fresh Mushroom Soup

I’ve been fueling my soup obsession with every kind of vegetable soup imaginable. My goal is to make soups that require little ingredients, little time, and little (okay fine, lower) calories by leaving out the cream. A few months ago, when I featured videos on my Instagram Story of my mushroom soup, a few friends reached out asking for the recipe. At that time, I had sent over a rough recipe of my soup. But the more people asked for the recipe, the more I realized I needed to get it up on the blog. This Fresh Mushroom Soup has just 6 simple ingredients, and while I prefer my soup pureed, a chunkier soup would also be delicious. (more…)
