Summer is almost over. I spend all winter waiting for summer and it just flies by in the blink of an eye. This year, I didn’t even get a chance at proper beach time. The one weekend I dedicated to working on my tan and being lazy on a beach chair was ruined by summer rain. So bad, that we left early making it a less than enjoyable weekend, to say the least. I have other things to say about that particular weekend, but I’ll keep that to myself. (more…)

Salmon Burger

At the Fayyad household, when the one doing the cooking goes on a diet, everyone goes on diet– whether they like it or not. Diet is a harsh word. Really, it’s making healthier food choices; in essence cutting the processed foods, oils and sugars.

I’m conscious of the boys, who require carbs to feel full. They made it pretty obvious that the diet menu isn’t going to work for them when I whipped up salmon burgers, sans burger buns. There were looks of confusion, “why would you make burgers without burger buns,” was uttered multiple times as the table was being set and a mad scramble to find any kind of bread to accompany the patties. Out of burger buns, they settled on toasted, sliced bread. I did throw shoestring fries in the oven for them, thinking that would be enough processed food for them not to realize that I was feeding them healthy food. (more…)

65 F degrees mid-February … yes please!

I cannot tell you how much I’ve missed the spring. As one of my friends, Ruby, has told me, I get inspired when the weather is nice – that is, any day above 60 F and sunny. And she is absolutely right. That’s why the minute I found out we’d be having a gorgeous 65 F degree day, I planned a low-key afternoon BBQ complete with my favorite Crab Parmesan Dip, burgers, garlic yogurt marinated chicken and cedar plank salmon. Zesty Salmon Kabobs

We’ve all heard about the health benefits of salmon, namely that it has tons of omega-3 fatty acid. Did you know that it’s also packed full of vitamins D and B12? Well, you just learned something new. I love salmon but I haven’t gotten very creative with it. Aside from baking it, I did try making cedar-plank salmon on several occasions. Smoked salmon is amazing on eggs benedict and surprisingly good as a dip with Chobani Greek Yogurt, olive oil and fresh dill. (more…)

Salmon Salad

After an afternoon of errands, and mostly shopping – and let’s not forget the ridiculously huge Burger Joint burger and side of fries, oh yea and a strawberry milkshake – I thought I should probably take it easy for dinner tonight. It was definitely one of those let’s pretend all the junk I ate today didn’t have any calories kind of day.  Salad is light, depending on the ingredients you use, so I went for a salad. I don’t really have salad items, however I had an unopened package of mixed greens, some smoked salmon and a brand new package of herbed goat cheese I knew I’d be able to put to use. From there, I created the salmon salad.  For dressing, I added a couple swirls of lemon juice.

 

 

Salmon Salad Recipe

Ingredients

Mixed Greens
Smoked Salmon
Capers
Herbed Goat Cheese
Pine Nuts
Lemon Juice
 

Directions

Mix together mixed greens, salmon, capers, goat cheese and pine nuts. Add lemon juice.
