Overnight Oats 2 ways: Pumpkin Spice & Apple Pie

Overnight Oats

We’re here—The 4 month sleep regression. Which means, Baby M isn’t sleeping, and quite frankly neither am I. As you know, we’re still doing mornings because mornings don’t stop for any baby or any sleep regression.

In an attempt to streamline our mornings, I’ve finally gotten on the Overnight Oats bandwagon. Especially because I can make ahead and portion it out for the week. Overnight Oats for EVERYONE!!

Browned Butter Pumpkin Pancakes

Browned Butter Pumpkin Pancakes

Have you had browned butter anything? Trust me it’s the most delicious thing you’ve ever had. So obviously, these Browned Butter Pumpkin Pancakes are the bomb dot com (do we still say that??!! I’m 1000% not up to date with todays lingo)

Doesn’t matter what lingo you use. You have to add these pancakes to the rotation.

Pumpkin Kubbeh [Vegetarian]

Pumpkin Kubbeh [Vegetarian]

It’s officially pumpkin season! Well, in the U.S. anyway. Here in Jordan, not so much. The big bright orange pumpkins I’m used to seeing saturating every single store front and outdoor market are few and far between in October. I was surprised to see them at the Vegetable tent mid-summer. I’m talking Big Bright Beautiful Pumpkins all over mid-summer. What a strange sight to see. The Fall fanatic in me, however, couldn’t quite comprehend and waited until mid-October to start incorporating all things pumpkin into my weekly menus. Luckily Cozmos carries fresh pumpkins, and I found pumpkin Puree at Safeway. (more…)

Savory Pumpkin Sage Soup

Savory Pumpkin Sage Soup

There’s no season like soup season.

We had our very first snowfall of the year last week. Super early for DC standards since it doesn’t usually snow until mid-January. In usual DC fashion, federal offices were open on time, but the roads were practically undriveable (yes I just made that word up). Of course, I had a meeting downtown bright and early. I decided to take the metro, since getting into the city even without snow is what nightmares are made of. Well, I made it all the way in, and had just gotten off at the closest metro stop (which still had me walking about 15 minutes to the meeting) when I got a text letting me know the meeting was changed to call-in only. Convenient. So what did I do? I put myself back on the metro but instead of heading home, I went to the metro nearest my office. Snow in the burbs was the worst. Just imagine slushy snowcone roads. God bless the genius behind uber! (more…)

Pumpkin Spice Sheet Cake with Cream Cheese Frosting

Pumpkin Spice Sheet Cake with Cream Cheese Frosting_3

There are some things that are just staples of Fall. Call me basic, but the minute we switch over from September to October, I’m ready for all things pumpkin {within reason}. You will not find me walking around with a pumpkin spice latte– mostly because I’m still holding onto my coconut skim lattes from Peets Coffee. However, you will find little pumpkins scattered around the house, and of course, a glass pumpkin outside the front door. You’ll probably also come across the wafting scent of pumpkin desserts freshly baked at least once a week. The latest being Pumpkin Spice Sheet Cake with Cream Cheese Frosting. (more…)

Basmati Stuffed Pumpkin

Basmati Stuffed Pumpkin

It’s fall! Officially pumpkin season. And no, I did not jump on the pumpkin spice latte bandwagon back in September. Pumpkins, in my personal opinion, should be enjoyed once the weather gets crisp and just a little chilly. Sweater weather, if you will. So when we were hitting 90 degree temps in September, I was still rocking my sleeveless tops and French vanilla coffee.

Sweater weather has arrived, and with it everything pumpkin flavored. I may or may not be a little obsessed, seeing that I have a plethora of pumpkin themed recipes on the blog. Some of my favorites include: BBQ and Spiced Pumpkin Seeds, Pumpkin Pecan Cheesecake,  Pumpkin Brownies, Pumpkin Spice Pancakes, Pumpkin Cheesecake with Cinnamon Pecans and Pumpkin Jam. (more…)
