Kale Chips with Garlicky Lemon Tahini Dip

Kale chips with Garlicky Lemon Tahini Dip

We’re pretty spoiled in America when it comes to the availability and variety of fruits and veggies. Sure, some things are seasonal, like cherries, peaches, persimmons and watermelon. But truly, if you really wanted something, you could find it. If you want watermelons in the middle of January, you’re going to find halved watermelons in the fridge.

In Jordan, not so much. Fruits and Veggies are truly seasonal. Remember when I was searching for Orange Pumpkins? Grape leaves are only fresh in the warmer months — even though, in my opinion, grape leaves and stuffed zucchini are super wintery to me. Persimmons and chestnuts are pretty much everywhere these days and apples and oranges have replaced the stacks of watermelons on the side of the road.

On the bright side, produce is super fresh. And guess what? It actually tastes really good. It’s Winter here in Jordan which means the kale I was searching for over the summer, is now in season. I stocked up on curly kale for salads but I decided to get a little bit creative. Truth be told, I wanted to make kale salad with crunchy chickpeas. But of course, I didn’t have any chickpeas. I wasn’t ready to give up just yet. Enter Kale chips with Garlicky lemon Tahini Dip….

Toasted Pita Nachos

Toasted Pita Nachos

It’s summer time, and quick, easy to throw together meals are the name of the game. Honestly, being a one-woman show means that most nights I just want to throw some popcorn on the stovetop and cozy up on the couch with a massive bowl of popped popcorn and an ice cold Diet Coke. I won’t tell you how many nights I’ve done that … there’s room for much judgment.

On the days when popcorn and Diet Coke just isn’t going to cut it, I crave easy-to-make snack-like dinners. I’m a snacker {could you tell when I mentioned popcorn for dinner?} I could live on Snack Boards. This is why I’m so in love with these toasted pita nachos. (more…)

Garlicky Roasted Asparagus & Tahini Soup

Garlicky Roasted Asparagus & Tahini Soup

It’s February! For better or for worse, February is the longest short month of the year. On Friday, our dear friend Punxsutawney Phil predicted six more weeks of winter, making everyone up and down the North East groan in despair. Hasn’t this winter been brutal enough?! And just to bring the point home, we were slammed with below freezing temperatures again early this week. It doesn’t look like we’re going to be catching a break anytime soon.

The only solace we have are warm, cozy soups. Garlicky Roasted Asparagus & Tahini Soup, for example, steaming mugs filled with Nutella Hot Chocolate, and lots of chunky layers. I may or may not have a set of grey fleece PJs with a fleece-lined hood that I rock every chance I get. (more…)

6 Ingredient Fresh Mushroom Soup

Fresh Mushroom Soup

I’ve been fueling my soup obsession with every kind of vegetable soup imaginable. My goal is to make soups that require little ingredients, little time, and little (okay fine, lower) calories by leaving out the cream. A few months ago, when I featured videos on my Instagram Story of my mushroom soup, a few friends reached out asking for the recipe. At that time, I had sent over a rough recipe of my soup. But the more people asked for the recipe, the more I realized I needed to get it up on the blog. This Fresh Mushroom Soup has just 6 simple ingredients, and while I prefer my soup pureed, a chunkier soup would also be delicious. (more…)

Sautéed Dandelion Greens [Elet]

Dandelion Greens

Last week, during my weekly visit to see my Tayta, she pulled out some sautéed greens, Elet (علت) and a few pita rounds. I hadn’t had Elet in a very long time and was really excited to share a plate with her. As we were sopping up the greens with pita bread, I asked for her recipe and diligently took notes (in my notes app), but I had one problem. I had to figure out what Elet was in English. After sending a couple WhatsApp messages to my cousins in Amman, I found that those delicious sautéed greens were actually dandelion greens. Sounds weird, right?

When I think Dandelions, I think those yellow flowers that grow between the grass and weeds. The ones I used to pick out to make makeshift flower bouquets for my mom. (more…)

Creamy Artichoke Spread

Creamy Artichoke Spread

Remember that week I spent in Rome I’m still eating my way through all the goodies I brought back.

While in Rome, I stopped at the local grocery store The Coop. It was perfect because that’s where I bought my 25oz bottle of extra virgin olive oil, that I’m still using. I also made my way to the spreads section of the store. There, I found black olive tapenade, capers in chunky salt and it’s also there I discovered Artichoke Pate. While the jar and ingredients were in Italian, I managed to google translate my way through. I wish I had brought a jar back home with me. Since I wasn’t able to, I decided to make my own artichoke spread with fresh ingredients. (more…)
