Happy New Year! We made it! Through all of 2018, through the holidays, through the ups and the downs and the in-betweens of last year. We did it. I’m so proud of us.

The first of the year is a time to look back and reflect on the last year. It’s a time to think about our successes, as well as our failures; to find ways to continue our success, and find ways to work through our failures. But most importantly, it’s a time to look forward. As cliché as it sounds, the new year really is clean slate. It’s fresh. It’s the good things we bring along with us and the not-so-great things we leave behind. How to Make Chicken Broth

It’s Fall! Which means, it’s officially time for one of my favorite food groups — Soup. Soup season [in my book] runs from late September through early March. Soup is just so warm, and cozy. It’s also very filling, and if done right, can be low calorie and super filling at the same time! #winning [Are we still using hashtags in conversation, or is that so 2017?]

The base for all my soups, even the vegetable ones, is chicken broth. I usually have a few boxes hiding out in my cupboard. This year, though, I’ve been making an active attempt to decrease my processed food intake — I consider boxed chicken broth processed. I mean, how do you think they keep broth suitable for consumption when it isn’t even refrigerated? A little bit of work on the front end, will save you lots of time later on. I’ll be honest, this recipe was supposed to be “red rice and chicken,” but, obviously, the rice isn’t red. It’s likely due to several factors; the brown spices I used, my not caramelizing the onions, pre-packaged chicken stock. Honestly, I can’t quite put my finger on the exact reason why my rice isn’t red, but I’m not even disappointed. Despite this being a red rice fail, it worked out perfectly as a modified kabsa. Middle Eastern Roasted Chicken and Vegetable Bake

Middle Eastern Roasted Chicken and Vegetables is one of my favorite comfort foods. Comfort food by definition is, ” food prepared in a traditional style having a usually nostalgic or sentimental appeal.” For most, that means lots of carbs and lots of sugar. For me, comfort food really does fit the Merriam Webster definition, that is, a traditional dish that brings back childhood memories. So what is it about One Pan Middle Eastern Roasted Chicken and Vegetable Bake that makes me nostalgic? I have so many childhood memories of being at my Tayta’s around dinner time. She’d whip up her chicken and vegetable bake. She always had a way of making even the hardest dish seem easy to pull together. It must be all her years of cooking for 8 children. Yes, eight. The apartment always smelled amazing. It was wafting with aromas from a mix of garlic, onion and Arabic spices that made me practically drool as I waited not-so-patiently in the family room watching TV. (more…)
