I love, love, LOVE cheese! Have I mentioned that before? On any given day I can live on cheese and bread, and Diet Coke of course. Baked Brie is probably one of my favorite cold-weather renditions of cheese. There are just so many ways you can make it. I’ve toyed around with savory baked brie topped with a spicy cilantro walnut blend. My all-time favorite, however, is this sweet Puff Pastry Baked Brie.
Every time I’ve served my Puff Pastry Baked Brie, people have fallen in love with it. It’s really easy to throw together for a small gathering, a snack for game night, or even a fun starter before dinner. I’ve never made a Puff Pastry Baked Brie that didn’t vanish by the end of the night. That’s how good it is.
What sets it apart from other baked brie’s, is (1) it’s wrapped in buttery puff pastry (2) when served warm, it oozes out, and (3) I use a mixed blend jam. It’s the jam that makes all the difference. Harris Teeter carries an apricot passion fruit jam that is to die for. If you’re trying to impress, absolutely go for a mixed fruit jam. And don’t forget that you can serve the Puff Pastry Baked Brie with fresh fruit (like apples) as well as crackers.
Ingredients
- 1 8-12oz wheel Brie or Camembert cheese
- 1 Puff Pastry Sheet, Unthawed
- 3 heaping tablespoons Apricot Jam (I used an apricot passion fruit jam blend from Harris Teeter)
- ¼-1/2 cup coarsely chopped walnuts
- 1 egg + water for eggwash
Instructions
- Preheat oven to 400 F
- Once your puff pastry has unthawed, roll out the puff pastry sheet another inch or so without tearing the puff pastry, keeping the rectangular form
- Place the streched puff pastry on a baking sheet
- Place the brie/camembert cheese wheel in the middle of the rolled puff pastry sheet
- Spoon your apricot jam on the cheese, covering the cheese.
- Sprinkle the chopped walnuts on top of the jam
- To wrap the brie, pull in each corner of the puff pastry to the middle of the cheese round, and pinch down to hold. You might have some extra puff pastry, just fold it around the cheese
- Mix one egg with water to create an egg wash, and brush the puff pastry with egg wash
- Bake for 35-20 minutes
- Allow the baked brie to cool for 5 minutes before serving
