There seems to be a recurring trend in my house, fruit on the verge of going bad. It’s awful, I know. See, it all starts when I go to the grocery store hungry (read as: when I go to Whole Foods starving). I see fruits and veggies that no one really eats, but for some reason in my state of starvation, I think that I’m going to make all these amazing foods. That’s never the case. Even when I make a list ahead of time, I end up picking up the most random items. And what do you know, I end up snacking on a bag of “low-calorie” chips and the food goes right into the fridge never to be seen — or eaten.
And that’s how I discovered peaches sitting at the bottom on the fruit drawer so ripe, that when I sliced through them, they literally split in half. Not that I’m complaining — pitting fruit is not my idea of fun. So I spent a good 10 minutes Googling my options for peach recipes before I decided on a cobbler, only because it seemed like the simplest option. As I’ve mentioned on several occasions, I’m not one for making desserts with more than 7 steps (and that’s stretching it for me).
This is not a low-fat recipe. I repeat, this is not a low-fat, low sugar, low calorie cobbler. But it is so worth all the calories. You can even things out with fat-free vanilla ice cream.
Ingredients
- 1 stick Unsalted Butter
- 1 cup Flour
- 2 cups White Sugar
- ¼ teaspoon Salt
- 1 cup Milk
- 1 tablespoon Baking Powder
- 6-8 Peaches, pitted and sliced into ½ wedges
- 1 tablespoon Fresh Lemon Juice (about ½ of a lemon)
- 1 tablespoon Cinnamon
Instructions
- Preheat oven to 375 degrees
- Melt butter in a microwave-safe dish, pour into your baking dish
- In a medium bowl, mix together the flour, 1 cup of sugar, baking powder and salt, add milk and stir until mixed well
- Pour the mixture over the butter
- In a large pot, combine peaches, 1 cup sugar and lemon juice
- Stir constantly, until the peaches are soft and the sauce boils
- Mix in the cinnamon
- Pour the peaches and sauce on top of the batter in your baking dish, DO NOT STIR
- Bake for 45 minutes
- Serve with Vanilla Ice Cream
