I’ve been so out of the cooking loop that last weekend I went on a baking spree. Yes, Baking spree. I spent my Sunday making goodies. Honestly, I’m not even sure who’d eat them since I’m doing my best to avoid sweets. A friend of mine gave me a basic cake recipe and I decided to do a little experimenting by adding in a different flavor. Let’s just say, they were requested as an after dinner dessert. Win.

Orange Cream Cakes

Yield: 24

Ingredients

    For the Cake
  • 2 cups Flour
  • 1 ¼ cups Sugar
  • 2 eggs
  • ½ cup oil
  • 1 ½ teaspoons Baking Powder
  • 1 ½ teaspoons baking Soda
  • 1 cup Organic 1% Milk
  • ¾ cup oranges
  • 2 tablespoons whipping cream
  • For the Frosting
  • ¼ cup Powdered sugar
  • 2 tablespoons Heavy whipping cream
  • Orange zest

Instructions

    For the Cake:
  1. Mix together oil, eggs, milk.
  2. Add baking powder, baking soda, flour, sugar.
  3. Then add oranges and whipping cream.
  4. Bake at 350 for 40 minutes.
  5. For the frosting:
  6. Mix together powdered sugar and whipping cream. Add orange zest. Mix until thickened. If needed, add more sugar or whipping cream.
