One Pan Parmesan Sage Chicken and Butternut Squash

We made it through Thanksgiving! I’m sure everyone is poultry-ed out, but I couldn’t help share this One Pan Parmesan Sage Chicken and Butternut Squash. Not only is it super easy to throw together (#winning), it’s also super cozy on a chilly winter night. So if you haven’t had enough poultry to last you through the end of the year, you have got to try this One Pan Chicken and Squash dish.

Thanksgiving is one of my favorite holidays, mostly because my mom hosts and my cousins and aunts/uncles who are in town come together. It makes for a great family photo opp. I missed Thanksgiving at home last year because I was in Paris celebrating my dearest friend Nona’s wedding. And, of course, my family didn’t disappoint. They sent me tons of photos and videos, making me want to get on the next flight out and be with them to celebrate.

This year, thanksgiving did not disappoint. Mom started off bright and early with the Macy’s Day Parade on in the background. The turkey, the trimmings, the prepping. I absolutely lent a helping hand. The boys did the honors of frying one turkey in the cul-de-sac. It’s a spectacle [especially since we all go out there to watch]. Family trickled in and filled the house with noise, laugher and lots of hugs. We took our annual family photo around the turkeys (yes, 2 turkeys). And we filled our bellies until we couldn’t move, but then still went for seconds on dessert.

In true Thanksgiving fashion, I have so many things to be thankful for:

  • My Family: While most of the time they grate on my nerves, I love them from the bottom of my heart. My parents and the Boys are my rocks in life.
  • My close-knit group of friends: I know, without a shadow of a doubt that I can count on my friends for the happy times and the sad times, and the let’s get crazy times.
  • MCO: The blog has been my baby. This year, I’m thankful for my followers and fans, for the connections I’ve made with other food bloggers, and for the growth and progress I’ve made on the blog and on the blog’s Instagram. I couldn’t have done it without the support of all my followers.
  • My Day Job: I cannot be thankful enough for the opportunities afforded to me by my company. These opportunities have allowed me to grow in ways I wouldn’t have been able to otherwise.
  • Online shopping: Yes, I had to add this in here, I’m so thankful for online shopping and not having to fight the crowds in actual malls. Oh, and Free returns!

One Pan Parmesan Sage Chicken and Butternut Squash

One Pan Parmesan Sage Chicken and Butternut Squash

Yield: 4 Servings

Ingredients

  • 4 Chicken Thighs, bone-in, skin on
  • 4 cups Butternut squash, peeled and cubed
  • 1 cup Chopped Fresh Sage
  • 1/4 cup Shredded Parmesan
  • 1 1/2 sticks unsalted butter, melted
  • 2 tablespoons Seven Spice
  • 1 head garlic, end chopped off to expose cloves
  • Salt, to taste

Instructions

  1. Preheat Oven to 400 F
  2. In a medium bowl, whisk together melted butter, chopped sage, shredded parmesan, seven spice and salt until well combined
  3. Place Chicken and butternut squash in a large bowl
  4. Pour butter sage mixture over the chicken and squash, and mix until coated [pro-tip: using your hands to mix the butter sage in works best]
  5. Place the chicken and butternut squash in a large baking dish, and place garlic head in the pan
  6. Cover with foil and bake for 25-30 minutes, until the squash is soft and the chicken is cooked though
  7. Uncover and broil for 10 minutes, until the chicken is lightly browned
