It’s officially winter in Jordan. Actually, I guess winter came along while I was home for Thanksgiving — my most favorite holiday ever. We’ve had a pretty long summer, and the warm days continued on until late November. When I got back, though, it was cold. I wouldn’t say Syracuse on a snow day cold. Or DC in December cold, but definitely significantly colder.
The problem isn’t so much that it’s cold outside… it’s that it’s cold inside. See, the thing about homes made of stone without insulation is that they’re the first things to absorb the cold. Oh, right, and central heating isn’t commonplace here. So, while the coldest days so far haven’t hit below 40 F (4 C), I can assure you, the inside of my apartment is somewhere near the freezing point of water.
Which means, My A/C doubled as a heat unit is working overtime already and I’m ready to invest in a gas standing heater despite my fear of gasoline and open flames in a home. I just can’t help falling asleep on the couch at night. And when I fall asleep, it’s usually for the night. I was aware of the cold home situation before I left and I stocked up on heated shirts, warm socks and sweatshirt PJs for the season. Must. Stay. Warm.
Ive also been making all things warm and cozy, that includes Instant Pot Hot Apple Cider, Nutella Hot Chocolate, and Crockpot Hot Chocolate — and coffee and tea of course.
Ingredients
- 12 Apples
- 4 Cinnamon Sticks
- 1 tbsp whole Cloves
- 6 Cardamom Pods
- 1 tsp whole Allspice
- Water
- 2 Oranges
- ½ cup brown sugar
Instructions
- Prepare the fruit by washing really well and cutting the apples and oranges into fourths with the skin on.
- Place the apples, oranges, cinnamon sticks, cardamom pods, allspice, cloves into the bowl of the instant pot
- Add enough water to reach the maximum liquid line of the instant pot (about 4 cups) then Stir in the brown sugar
- Close the Instant Pot and make sure the pressure valve is set to Sealing
- Use the high pressure setting and set the timer for 10 minutes
- Allow the cider to naturally release for 1 hour, until the pressure valve goes down
- Carefully strain the liquid and press the juices out of the fruit
- Store in the fridge for up to 1 week
