Sometimes I think to myself, there should be a Netflix series based off of true events in my life. I’ve already thought this through. It would include narration, screenshots, and re-enactments based on true events. I’m still mentally working out the individual episodes and I’m not sure how I’d break the seasons up, or how many seasons would make up the totality of the series. But I’m telling you, I have some pretty good material to work with. Without getting too detailed, the last two weeks of February were outrageous. A lot a bit of drama, with a side of crazy is probably the best way to describe it.

See, some people come into your life for very specific reasons, whether or not they’re meant to stay is another discussion altogether. Some people make an entrance just to give you a jolt. They test your limits and make you question who you are, what you stand for, your belief system, if you’re smart enough or successful enough, or whether or not you have your priorities straight. I can assure you all have been confirmed. I am, indeed, very happy with the woman that I am, how far I’ve come, my intellect, my belief system, way of life and my ambitions. These people also heighten your sense of fight or flight (pro tip: if your senses say flight, run—fast—in the opposite direction and don’t look back).

Needless to say, this was one of those “not meant to stay” individuals. There was one more thing I learned during that time … how to make one of the best cucumber Greek yogurt dips, and that is all that matters.

If I never pitch my “based on true events” Netflix show, I at least know that when I’m an old lady I’m going to have so many good stories to tell.

Cucumber Greek Yogurt Dip

Yield: 8 servings

Ingredients

  • 2 cups Greek yogurt
  • 1/2 cup finely chopped dill
  • 1 small shallot, minced
  • 1 garlic clove, minced
  • Kosher salt, to taste
  • Lemon Juice, to taste

Instructions

  1. In a medium bowl, mix together the greek yogurt, garlic, and shallot
  2. Add cucumbers and dill and continue to mix until well combined
  3. Add a little lemon juice to bring out the flavors
  4. Add salt to taste
  5. Serve with chips, or vegetables
