Browned Butter Sweet Potato Bake

Thanksgiving this year, much like every year since I can remember, we had our annual get together at my parent’s house. That means mom took over all the major dishes from the Turkey to green beans to stuffing and mashed potatoes, while she farmed a dish or two out to me. I can just imagine my mom at home working the turkey with the Thanksgiving Day Parade on in the background. It’s seriously tradition. The Turkey wouldn’t turn out if he didn’t spend all morning jamming to the parade with my mom. Then everyone arrives a couple hours before meal time to set up and put the finishing touches before all is devoured and no one can move because of a food induced coma. (more…)

Orange Cream Cakes

 

I’ve been so out of the cooking loop that last weekend I went on a baking spree. Yes, Baking spree. I spent my Sunday making goodies. Honestly, I’m not even sure who’d eat them since I’m doing my best to avoid sweets. A friend of mine gave me a basic cake recipe and I decided to do a little experimenting by adding in a different flavor. Let’s just say, they were requested as an after dinner dessert. Win. (more…)

Lazy Pumpkin Brownies

 

To be a cook, is not about making everything from scratch, it’s about being smart with your ingredients. Some may call it cheating, faking, you name it. But really, isn’t it about mixing together the right ingredients to create a masterpiece? Plus, if we weren’t meant to use pre-packaged food, why would they sell them in the grocery stores and make them so easily accessible and cheap? Why would I spend more time making something that could essentially take me ¼ of the time if I used pre-packaged kits. Well, if you’re the decision maker in your kitchen it’s your prerogative. Caramel Apples

 

The best part about living in the DC area is that we get to experience all four seasons. Arguments can be made that not all four seasons are enjoyable. But we get all four nonetheless. Every season, as you know has its food staples, as I like to call them. In the fall it’s everything pumpkin and apple. The summer, I become obsessed with watermelons, ice cream and red white and blue. Springtime is about pastels, brunch, cookies and cakes. Winter is all about stews, soups, candy canes and hot chocolate. Additions can be made to said seasonal staples. It’s all about apples and pumpkins now and one of my number one cravings during closer to Halloween is Caramel Apples. (more…)

Cilantro-Lime Rice

 

After spending some time with my mother this weekend, I decided to take some of her advice. Mom suggested I find a hobby to keep me busy since I’ve been getting bored lately. That would have been easy, if I could think of one activity that could keep me interested and entertained for a long period of time. Cooking can’t keep me busy all the time. That’s when I realized, it’s time to get cracking on my “Before I’m 30 List.” Yes. Such a list does exist. It started when I was 15 on a piece of college-ruled paper. When I got my first laptop, I digitized my list and have been crossing things off ever since. Some have heard about this list … not many have actually seen it, or know what’s on it. That’s probably because, I’ll admit, there are some things on there that I should have accomplished by now. (more…)
