How to Make Chicken Broth

It’s Fall! Which means, it’s officially time for one of my favorite food groups — Soup. Soup season [in my book] runs from late September through early March. Soup is just so warm, and cozy. It’s also very filling, and if done right, can be low calorie and super filling at the same time! #winning [Are we still using hashtags in conversation, or is that so 2017?]

The base for all my soups, even the vegetable ones, is chicken broth. I usually have a few boxes hiding out in my cupboard. This year, though, I’ve been making an active attempt to decrease my processed food intake — I consider boxed chicken broth processed. I mean, how do you think they keep broth suitable for consumption when it isn’t even refrigerated? A little bit of work on the front end, will save you lots of time later on. I love dips. Love them. My only issue with restaurant dips and pre-packaged dips, is that I don’t know what they’re really putting in there. And also, why are they filled with so many calories? I got to thinking that there has got to be a better way to make my favorite dips with a lot less calories and without sacrificing taste.  Let’s be honest here, sometimes when calories are reduced, flavors dull. I’m not about that life. I won’t eat something that doesn’t taste good just to cut calories. So I set out to make “skinny/healthy” Spinach Artichoke Dip. (more…)

It’s fig season, and what better way to celebrate than with Honey Almond Fig Cake. Fig season generally runs from August through October – so look out for tons more fig recipes from all your favorite bloggers.

Let’s talk about Figs for a minute. I love figs. It all started in Kindergarten when they used to pass out Fig Newtons during snack time. Remember those? I’m not going to lie, they were my favorite snacks. At the time, though, I did not make the connection between the sweet fruit-filled bar and the actual fruit. This is probably the 100th time you’ve seen me mention wanting to get my act together and get fit.  I’ve mentioned wanting to get healthy and back in shape. That’s only because I’ve been telling myself this over and over and making no real strides to progress. Sounds like a personal problem, right? Well, I’m pleased to announce, I signed up for (way more classes than I should have) of Pure Barre. And yes, I’m actually planning to stick with it. No Added Sugar Watermelon Coconut Popsicles

It’s been HOT. So hot. Unbelievably hot. Unbearably hot. I wouldn’t mind the heat if it wasn’t so humid too. That’s what I get for making Northern VA home. I shouldn’t be complaining though, it didn’t start warming up around here until mid-June. Then, inexplicably, we went from 60 F to 95 F seemingly overnight. Also, I shouldn’t be shocked. It is what it is, I guess. I’ll be complaining about the heat and humidity every year, every time we hit a heat wave. You can count on it.

The only thing we can do to beat the heat is stay indoors, where it’s nice and air-conditioned and snack on some No Added Sugar (as long as you don’t add the ganache) Watermelon Coconut Popsicles. (more…)

Toasted Pita Nachos

It’s summer time, and quick, easy to throw together meals are the name of the game. Honestly, being a one-woman show means that most nights I just want to throw some popcorn on the stovetop and cozy up on the couch with a massive bowl of popped popcorn and an ice cold Diet Coke. I won’t tell you how many nights I’ve done that … there’s room for much judgment.

On the days when popcorn and Diet Coke just isn’t going to cut it, I crave easy-to-make snack-like dinners. I’m a snacker {could you tell when I mentioned popcorn for dinner?} I could live on Snack Boards. This is why I’m so in love with these toasted pita nachos. (more…)
