Browned Butter Pumpkin Pancakes

Have you had browned butter anything? Trust me it’s the most delicious thing you’ve ever had. So obviously, these Browned Butter Pumpkin Pancakes are the bomb dot com (do we still say that??!! I’m 1000% not up to date with todays lingo) 

Doesn’t matter what lingo you use. You have to add these pancakes to the rotation.

Ingredients

  • p.p1 {margin: 0.0px 0.0px 0.0px 0.0px; font: 13.0px ‘Helvetica Neue’}
  • 3 tablespoons salted butter 
  • 1 cup All Purpose Flour
  • 2 tablespoons light brown sugar
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 heaping teaspoon Pumpkin Pie Spice
  • 1 cup milk
  • 1 egg
  • 1/4 cup pumpkin purée 

Directions

  1. In a medium bowl, mix together flour, baking powder, brown sugar, salt, pumpkin pie spice
  2. In a medium saucepan, melt the salted butter over medium heat and keep watching. It will bubble up and then start turning brown. Swirl around a few times until it starts to become fragrant and get browned. Then quickly remove from heat and place in a heat-proof bowl
  3. Add milk, eggs, pumpkin purée to the browned butter and whisk until combined
  4. Add the pumpkin mixture to the dry ingredients and whisk until combined 
  5. Heat some butter in a large skillet over medium heat and pour pancake mix in dollops in the skillet. Cook for about 3 minutes on each side. Serve with pecans and maple syrup.
