My two favorite things— breakfast and Mexican food — come together deliciously and easily with these freaking amazing breakfast nachos.
Breakfast Nachos
Ingredients
- 1 family size bag Tortilla Chips
- 2 cups salsa or pico de gallo
- 1 can black beans
- 2 cups Pulled Beef Taco meat (see recipe link) or ground beef taco meat
- 6 eggs
- 1 cup corn
- 1 1/2 cups Mexican cheese
- Avocado
- 1/2 cup Sour cream
Directions
- Preheat oven to 400F / 200C
- In a large sheet pan, lined with parchment paper, spread the tortilla chips evenly.
- Top with salsa, black beans, corn and taco meat
- Use a spoon to make 6 holes spread across the pan and crack each egg into a hole
- Top with cheese and bake for 15-20 minutes, until the egg whites are cooked through
- Serve with sour cream and avocado slices
