Breakfast Nachos

My two favorite things— breakfast and Mexican food — come together deliciously and easily with these freaking amazing breakfast nachos.

Ingredients

  • 1 family size bag Tortilla Chips
  • 2 cups salsa or pico de gallo
  • 1 can black beans
  • 2 cups Pulled Beef Taco meat (see recipe link) or ground beef taco meat
  • 6 eggs
  • 1 cup corn
  • 1 1/2 cups Mexican cheese
  • Avocado
  • 1/2 cup Sour cream

Directions

  1. Preheat oven to 400F / 200C
  2. In a large sheet pan, lined with parchment paper, spread the tortilla chips evenly.
  3. Top with salsa, black beans, corn and taco meat
  4. Use a spoon to make 6 holes spread across the pan and crack each egg into a hole
  5. Top with cheese and bake for 15-20 minutes, until the egg whites are cooked through
  6. Serve with sour cream and avocado slices
