I am completely obsessed with my air fryer. Since my husband decided during the early days of my pregnancy was a good time for him to go on a diet (I was not bitter at all 😒) and super oily food during pregnancy wasn’t sitting well with the baby, the air fryer has been one of our favorite kitchen gadgets.
BONUS: you don’t have splashed oil to clean off your stovetop and backsplash. Anything and everything I can make in the air fryer is a win win.
Post-baby, the airfryer is still one of our primary kitchen appliances. Now we can’t live without the microwave, Instant Pot and Air Fryer. It was worth every penny — or Jordanian Dinar (JD) in my case.
Air Fryer Mongolian Beef
Ingredients
- 1/2 kilo beef cut into thin strips
- 1/4 cup corn starch
- Oil for spraying
- Coconut oil
- 1 tablespoon ginger
- 3 cloves garlic
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/2 cup water
- Thinly sliced green peppers
Directions
- Prepare the beef by mixing together the beef strips with corn starch, making sure to coat it. Let it sit for 10-15 minutes
- Preheat the air fryer
- Lay an even layer of beef in the air fryer basket and spray with oil
- Cook for 8 minutes at 195C, checking every few minutes and shaking the basket for an even cook. Do this in batches until you’ve finished all the beef
- In a large deep skillet, sauté coconut oil with garlic and ginger until fragrant
- Add in the green peppers
- Stir in soy sauce, brown sugar and water
- Bring to a boil and simmer for 7-8 minutes until slightly thickened
- Toss the beef strips in and cook together for another 2 minutes
- Serve with rice
